OUR STORY
The Coop may have just opened up in February, but my family has been serving people delicious food and smoked meats for over ten years at Two Chicks & A Rooster Catering & Barbeque. Before catering, my mom crunched numbers in the banking world and my dad worked in IT to make ends meet - they both enjoyed helping people and we all loved food. We had dinner together almost every night, Food Network was always on the TV, and some of my fondest memories are sharing elephant ears at the Oregon State Fair each year.
The kitchen has always been home for me. Some of my earliest memories are about the dishwasher, a burnt popcorn catastrophe smelling up the house, and that classic black and white checkered floor. In college, I met some of my best friends while slinging pizzas in the basement of our student union building, and over the summers I’d cater with my mom on visits home.Post-grad, my job search didn’t pan out, so I found another kitchen job at a small dive bar. There I met a friend who taught me there’s more to life than the small slice we are born into, I fell in love with tiny spaces (this ain’t my first rodeo!), and the travel bug bit me hard. We updated an old camping trailer and set off on an Alaskan adventure. There we found a school bus, converted it to a tiny home, and drove it all the way to New Mexico. After a year on the road, I knew it was time to grow some roots again - Portland was calling me home after 6 long years. Before I could even ask my mom for a job, the food truck landed in our laps.
My mom has been catering for Sara and Jerry of Trail Distilling since Jerry’s return from Afghanistan back in 2012. They trusted that we could transform their old food truck into something vibrant and exciting for their bar and the community. Bringing delicious food - especially food incorporating the incredible spirits produced at Trail - to the distillery, means a full service license, more people in the door, more connections, more growth, more potential. Sara and Jerry started Trail Distilling out of a love for whiskey and now they produce five different spirits and own their entire distillery. My mom started Two Chicks and a Rooster as a side gig to pay the bills - but she was great at it. And she loves serving others. And somehow here we are today, running a bright yellow food truck in the rolling hills of Oregon City.
If there's anything I've figured out in these 23 years of life, its that change is the only constant and the best chapters are often the most unexpected ones. Though I never saw myself joining the family business, here I am living the dream. Work doesn’t ever feel like work and I never seem to know what day it is - because it really doesn’t matter when you love the life you live. I get to hang out in a dope mobile kitchen at an awesome distillery, meet people from all over the place, serve delicious barbeque invented by my dad, and spread the word about what my mom loves to do (and they even pay me! I’d probably do it for free).
While I’m a true free spirit, I’m thrilled to grow some roots here and get to know the vibrant community in Oregon City. I’d barely set foot in town, and hadn’t been door to door since selling girl scout cookies, yet somehow I felt completely at home telling strangers I was opening up a food truck just up the road. Thank you for welcoming us with open arms and hungry tummies. I hope to see you all very soon.
